“There is rapid and specific changes in brain composition after one meal”
Summer Pie Contest Rules
Local organic fruit and vegetable pies are permitted. Healing fats and sugars are essential to life. The human brain is 60% fat. This pie contest permits the use of only wholesome healing traditional fats and sweeteners. No bleached flour is permitted. For a good display, please put your best recipe on an 8 × 11-inch page and present it in a plastic stand for judges to view contents.
Wholesome sweeteners allowed in the filling and crust are
- Rapadura or Demerera brown sugar
- Raw honey
- Pure Maple syrup
- Light organic cane sugar (no lye used to make it white)
- Xylitol
- Stevia
Healing fats allowed are
- Butter – has butyric acid to kill candida yeast overgrowth, Vitamins A, D, E and K2
- Tenderflake lard ® (has 48% monounsaturated fat, plus D3 to prevent diabetes)
- Extra virgin or organic coconut oil – world’s best source of lauric acid after mother’s milk
These fats support the human gene pool for centuries. They support the brain, reduce food cravings for sugar, support immunity against cancer, keep Candida yeast overgrowth controlled, and will balance hormones for improved social behavior and performance.
The Holistic Cooking Academy of Canada offers these guidelines to establish public awareness in the Ottawa Valley. We can build a shield against pandemics such as cancer, heart disease and diabetes using this guideline for healthier choices. In the next decade, dieticians predict a 30% increase in diabetes. In 2007, 400 babies in Ontario are born with cancer. This Farmer’s Market Pie contest will assist your effectiveness to stop such pandemics. Protein, fiber and fat regulate blood sugar, and kills cancer in 50% of women, 30% of men (Kellogg Report, 1982.).
Since 1911 a new fangled fat – hydrogenated vegetable oils – hit the marketplace in the form of Crisco Shortening ®. This killer fat is permitted by government to be used in every commercial pie in every grocery store across Canada. Confused chefs may use this killer fat in public restaurants. Due to widespread ignorance in the public sector raised in an education system that leaves nutrition an elected study, the Holistic Cooking Academy of Canada offers these guidelines to counter much corruption.
In 1984 Harvard University reported 30,000-40,000 deaths per year from heart disease due to hydrogenated vegetable fats. The Surgeon Generals Report of July 1988 stated that 70% of all disease is caused by excess of high omega 6 vegetable oils causing deficiency in omega 3. Hydrogenated fats are not yet removed from grocery shelves by either the Health Protection Branch or Health Canada (due to loss of job and loss of votes), so hydrogenated fats can only be removed by public boycott. Let’s do it!
Six pie categories are

- single crust,
