Summer Fun with Healthy Cooking Classes in the Ottawa River Valley for home chefs and professionals
GENERAL OUTLINE: Nine themes are presented each summer to build immunity one meal at a time. The 2012 series begins Monday, June 25 to Friday Jun 29. On Mondays, at the beginning of each class, the notes are distributed in binders for the four seasons. See the nine week schedule outlined below. During the introductory lecture, tasty beverages and food samplies are served, and some may likely be new to you. Their health benefits are described to prepare you for the four workstations. Then, you pick your workstation, so hands on experiences are 50% of the class. Please keep your workstation tidy. A food composter will collect your peelings immediately. A sink of hot soapy water is prepared for the dirty dishes, and we all serve one another as sous chefs as time permits. Group discussions are more educational. To qualify for a certicate per theme an exam is given on Fridays. The exams may take a few days to write in an oral atmosphere to accomodate English as a second language or dyslexia, which are great gifts. A passing grade is 80% or higher.
PLACE: 260 Napoleon Street, Carleton Place, ON K7C 2W9. We are located an hours distance from the Ottawa international airport, the Via Rail Train, or the Greyhound bus station. Bob and I greet you and drive you to the campus. Please be prepared to pay $50.00 for this service.
TIMES: 10 AM to 3 PM Mondays, Wednesdays, Thursdays
Tuesday evenings from 6 - 10 PM.
FEES: Fees are tax deductible only when $100.00 per class or over. Your tutorial fee is $500 per week. HST of $65.00 applies to Ontario students. No tax is charged for out-of-province students. Special rates for room and board is $840.00 per month, or accomodations can be made for family packages at $1,000.00 per couple or $2500 for a parent with two children under the age of eight, attended by a Nannie. All postdated checks or direct bank deposits for registration and accommodations are payable to the Holistic Cooking Academy of Canada. Your tax deductible investment provides to you the knowledge and wisdom needed to prevent disease through organic foods. Local organic foods come from the Carleton Place Farmer's Market and CSA farmers in the Valley. Shop Saturdays 8 AM to 1 PM.
AGE LIMITS: Children eight years old or older are welcomed to class. During class, children of younger ages are to be kept downstairs where there is a trampoline, or outside with a wading pool or other games. There are beautiful parks in the town and along the Mississippi River.

Seats are held in priority of calls. Out of country students are sent letters of enrollment in advance for presentation at the customs office upon entry to Canada.
SIZE: The kitchen is limited to four students.
OBJECTIVES: I will hone your communication skills to create a professional holisitc attitude as a certified holistic instructor or as a holistic professional chef and cateror, or a holistic home chef. All you need is a love of food and a desire to have integrity with your food and speech. There is much laughter. Anger is respected, but no swearing is permitted, as your sense of justice or righteousness are expressed. Whether one class or one week, or the entire nine weeks, your life will change for strength and self knowledge gained. Restructured alkaline water with whole organic foods, herbs and spices are truly delicious and nourishing, and satisfying to the body, mind and spirit. We follow principles and food laws that sustain healthy longevity, as set forth from the time of Moses, and validated by live blood tests, which means we do not serve pork meat. Pork fat, on the other hand, has Vitamin A and D, E, and K2, which are desperately needed by the immune system in a world promoting low fat diet, which has been proven to lead to depression and suicide.
ACCOMODATIONS: On top of tutorial fees, for out-of-town guests, accomodations are $210 per week for room and board or $30 per day, or $840.00 per month. For now, our head office is a bungalo with 3200 sq. ft. with one stove and two fridges. We have two guest rooms, one is a bedroom downstairs with a quality queen size bed and walk in closet with a private bath and living room with a table for private study in the sun, and book shelves and private TV placed in an open, clean, bright and spacious area will yellow walls and plants. There is no door to block off sounds between two floors. A guest room upstairs has a door and smaller closet. Laundry facilities are convenient with scentless soap. We use essential oils to clean the house. The house is cloistered with huge deciduous and evergreen trees all around, with a fenced back yard. Through the windows you are surrounded by a view of organic gardens of flowers, vegetables, and herbs, two apple trees, and a mass of raspberry bushes along the back wall. Please relax in the sun or stretch and dance on the grass. Bring music that uplifts you to share with us. The first two persons to enroll may live with Bob and I so that you may see and feel up close how the holistic lifestyle unfolds for you physically, emotionally and spiritually. All meals are begun by holding hands and bowing heads to give thanks for the many hands that bring the glorious organic food and fats to our table and for the virtues noticed in our lives during the day. Two other quests may have weekly arrangements secured by the Academy at a nearby bed and breakfast, which is located 30 minutes away by walking. This gives you the experience of a nice morning and afternoon crossing of the beautiful Mississippi River and a walk down Bridge Street that is lined with heritage stone bulldings built in the 1700's graced with flower boxes and baskets on ornate street lamps and rest areas between the many quaint businesses. Carleton Place is the most thriving town in Ontario, the western gateway to Canada's capital city, Ottawa. Ottawa is clean and beautiful, full of summer events that you may wish to enjoy before or after your classes begin or end.
CERTIFICATES - When desired you will be certificated to teach or use the recipes given in each theme in locations where you desire, providing you join our Almuni team annually for $50.00 to keep yourself updated. This alumni fee is payable when you finish the exam successfully, and your picture and class schedules are put on our website to help direct traffic to your part of the world.
A DIPLOMA - is based on successful completion of 12 certificates plus seven seminars and two final exams. The final practicum exam gages your organizational skills and knowledge, and a final written exam is based on the listed books and seminars. Final exams are $75.00 each for our time to mark them. To complete this journey one can combine summer classes with distance education. Distance education provides DVD's, emailed notes and exams, and phone conversations. Thirteen exams must be written. You may arrange your practicum exam by appointment at the Academy, or in your home with a video camera held by a friend or professional chef who is interested to gain an insight into holistic cooking. All notes and exams are accreditied and dated. For annual updates, alumni members receive a stick that is mailed to you. Please print out the new notes and recipes, and replace the old notes, which are mailed back to the Academy to be discarded.
CANCELLATION POLICY: A thirty day notice must be given.
JACKETS AND HATS - Purchase our official jacket and hat for $50.00. it must be worn during the practicum exam. Wear them when attending work or events. You become a walking billboard, and people are drawn to you like a magnet.
HOME COOKS - are welcomed for evening classes at 6- 10 PM, or the series of four classes per week which include the three daytime classes 10 AM - 3 PM on Mondays, Wednesdays and Thursdays. They are exempt from exams.
EVENING CLASSES for HOME COOKS - $75.00 per class, plus HST $9.75, is $84.75. This includes the $25.00 food supply fee for a six course meal. Save $30.00 with a package of four classes ($270 per week, plus $35.10 HST); save $100.00 for eight classes ($250 per week, plus 32.50 HST.) The knowledge you gain is based on clinical studies and math, and can reverse or prevent diabetes and subsequent heart disease or macular degeneration and will build immunity against cancer (as happened with the father of one of our teaching chefs).
